Ingredients:
Nonstick cooking spray (or a little vegetable oil or olive oil) 4 boneless, skinless chicken breasts (6 to 8 oz. each) 1 1/2 Tbsp. extra-virgin olive oil 1 1/2 Tbsp. packed light brown sugar 1 Tbsp. chili powder (mild) 1 tsp. garlic powder 3/4 tsp. salt (table salt or fine sea salt) 1/2 tsp. black pepper
Directions: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and coat lightly with cooking spray. Place a chicken breast between two sheets of plastic wrap on a flat surface. Pound it to an even thickness using a rolling pin or meat mallet. Repeat with the remaining chicken breasts. Arrange the chicken breasts on the prepared baking sheet and drizzle with olive oil. In a small bowl, mix together brown sugar, chili powder, garlic powder, salt, and pepper. Rub this mixture all over the chicken breasts. Place the chicken in the oven and bake until an instant-read thermometer inserted into the thickest part registers 160°F (71°C), about 12-18 minutes. Remove the chicken from the oven, transfer to a platter, and tent with foil. Let rest for 5 minutes to allow juices to redistribute.
