8 oz fresh sliced mushrooms 1/2 large yellow onion, diced fine 1 Tbsp minced garlic 2 Tbsp unsalted butter 1 Tbsp extra virgin olive oil 2 tsp chopped fine thyme leaves 2 tsp chopped fine rosemary sprigs 1/2 tsp garlic pepper 1/2 tsp Lawry's seasoning salt 1/2 tsp Mrs. Dash original seasoning 1 large egg, beaten (for egg wash) Chicken broth 1 sourdough baguette 8 oz Brie cheese 1 puff pastry sheet, thawed
Directions: Heat a skillet over medium heat. Add olive oil and butter. Sauté onions until transparent, then add garlic and continue cooking for two minutes. Introduce mushrooms, ensuring they're not crowded, and stir frequently. Add extra butter if needed. Sprinkle in thyme, rosemary, and seasonings, cooking until mushrooms are browned. Pour in just enough chicken broth to cover the mixture and reduce until thick. Remove from heat and let the mixture cool. Preheat your oven to 400°F. On a lightly floured surface, roll out the puff pastry. Slice the Brie horizontally and place half on the pastry, cut side up. Top with cooled mushroom mixture and the other half of the Brie, cut side down. Wrap the pastry over the Brie, sealing the edges. Decorate with pastry scraps if desired and brush with egg wash. Chill the prepared pastry for 30 minutes on a parchment-lined baking sheet. Bake for 30 minutes or until the pastry is golden and the cheese is melty.
