Creamy Cajun Chicken Pasta

Ingredients:

8 ounces rotini pasta
Olive oil
2 tablespoons unsalted butter
Chicken breast
Cajun seasoning
4 cloves garlic, minced
1/4 cup minced onion
1/2 cup tomato sauce
1 1/2 cup heavy cream
1/2 cup chicken broth
Fresh squeeze of lemon juice
2 tablespoons chopped fresh parsley leaves
Salt and black pepper, to taste
1/2 cup Parmesan

Instructions:

1️⃣ Pasta Prep: Begin by cooking the rotini pasta according to package instructions. Meanwhile, heat a drizzle of extra virgin olive oil in a large skillet over medium heat.

2️⃣ Chicken Cookery: Butterfly cut the chicken breast and season both sides with 1 tablespoon of Cajun seasoning. Place the chicken in the skillet and cook for about three minutes on each side, or until it reaches an internal temperature of 165°F. Once cooked, remove the chicken from the skillet and set aside.

3️⃣ Sauce Foundation: Return the skillet to medium heat. Melt the butter, then add the garlic and onion, sautéing for about 30 seconds. Stir in the tomato sauce and cook for a few minutes before adding the heavy cream and chicken broth. Allow the sauce to simmer until it thickens.

4️⃣ Flavor Building: To the sauce, add an additional sprinkle of Cajun seasoning and a squeeze of lemon juice. Stir in the Parmesan cheese, allowing it to melt and blend into the sauce. Reserve some sauce for drizzling over the chicken later.

5️⃣ Combining Forces: Add the cooked pasta and fresh parsley to the skillet, tossing everything together until the pasta is well coated with the creamy sauce. Season with salt and pepper to taste.

6️⃣ Plating Perfection: Serve the pasta with the cooked chicken breast on top. Garnish with additional parsley and drizzle with the reserved sauce for an extra touch of flavor.
